This isn’t a baked recipe, but it’s one of my favorite ways to eat popcorn. You have to be careful because it’s addictive, and before you know it, you’ll have eaten more than you’re fair share. This recipe requires a little bit of work, but it’s worth it.
Peanut Butter Chocolate Drizzle Popcorn
Adapted from CountryCookinMama on Tasty Kitchen
3/4 cup light corn syrup
3/4 cup sugar
3/4 cup (generous) chunky peanut butter
2 tsp vanilla
10 cups popped popcorn
1/2 cup chocolate chips
1. Pop your popcorn and place into a large bowl. I put it in our largest pot because I don’t have a bowl that’s quite big enough to let me stir without making a mess.
2. In a small saucepan over medium heat, mix together the corn syrup, sugar, peanut butter and vanilla. Bring to a boil and cook for one minute. Be sure to stir constantly to prevent burning.
3. Working quickly, pour the peanut butter mixture of the popcorn and stir to coat. Spread out over a cookie sheet.
4. Melt chocolate chips in microwave. Drizzle over the popcorn. Place in fridge for 15 minutes to set. I normally store my popcorn in the fridge.
