Birthday Cakes

Since I’ve started with my Tuesday, Thursday family, there has been two birthdays (the Mom’s and the Aunt’s). As a special little project, I helped the boys bake a cake to surprise them! I just went with a simple (but very yummy) yellow butter cake and chocolate frosting. Quickest way to win anyone over. I let the boys go to town with decorating, as evidenced by the overload of sprinkles on both cakes.

Note: I didn’t have cake flour, so I had to make a substitute. To make one cup of cake flour, place 2 tbsp cornstarch in a measuring cup, and fill it to the one cup mark with all purpose flour.

Yellow Butter Cake

1 cup butter
1 1/2 cups all purpose flour
1 1/2 cups cake flour
1 tbsp baking powder
1/2 tsp salt
1 3/4 cup sugar
4 eggs
2 tsp vanilla
1 1/4 cups milk

1. Preheat oven to 350F. Grease and line two 9 inch cake pans.
2. In a medium bowl, whisk together flours, baking powder and salt.
3. In a separate bowl, beat butter and sugar until fluffy. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla.
4. Alternate mixing in flour mixture and milk, making three additions of flour and two of milk.
5. Divide batter between two cake pans, and bake for 30-35 minutes. Once cool, top with frosting of choice.
